Helados is Spanish for 'ice-cream' and Jauja refers to a legend of indulgence.

We are a small closely-knit team led by Po-Lin Lim, formerly a senior corporate lawyer in Melbourne's top tier legal firms. Po-Lin had for some time identified a gap for quality niche ice-cream in Australia. So after falling in love with the delectable ice-creams crafted by the Mazzini family during her travels in Argentina, she made the bold decision to embark on the adventure of creating 'Helados Jauja' in Australia.

Her first step was to convince Lucia Adler, Jauja's matriach and founder in Argentina, to take a leap of faith and to train her in the family's cherished old-fashioned techniques of making real ice-cream from scratch. And so it was in Jauja's kitchen in El Bolson, a hippy valley in southern Argentina's Patagonia, that Po-Lin began her disciplined pursuit of this craft.

On returning to Melbourne, Po-Lin set out to translate her experience of Argentina as a country and Patagonia in particular, into the much-loved heladeria on Lygon Street as we know it today. Our kitchen here in Carlton offers Melbourne an amazing range of deliciously indulgent ice-cream and sorbets as never tasted before. And although we continue to craft ice-cream from our Argentinian heritage, we have drawn from the different food cultures of our cosmopolitan crew to successfully create and construct uniquely original ice-creams that absolutely delight the human palate from the fabulous variety of ingredients available to us here in Melbourne.

In Argentina, we are not the largest ice-cream producer but we are immensely proud to be said to be the finest. Our ice-cream and sorbets are all crafted in our one kitchen located in El Bolson from scratch and then trucked across the country to our other Jauja heladerias, top-rated restaurants and luxury five star resorts.

Similarly in Australia, we are delighted to have from our infancy been proclaimed by many to be the finest. We are not the largest or cheapest gelateria on this continent, but we certainly pride ourselves on being truly innovative in our our craft while staying true to our hippy artisan DNA.
